Pumpkin Spice Muffins with Coconut Crust

Ingredients

8 Emmy's Organics Vanilla Bean Coconut Cookies
3 additional Emmy's Vanilla Bean Cookies cookies to fold in
1 1/2 cups whole wheat pastry flour
3 tsp baking powder
1 tbsp pumpkin spice
1 tbsp coconut sugar
Pinch of sea salt

Instructions

1.Preheat the oven at 350 F
2.Mix all of the dry ingredients together and wet ingredients together in separate bowls.
3.Set aside Emmy's Vanilla Bean Cookies for muffin crust bottoms
4.Incorporate ingredients and mix well
5.Line a cupcake tin with liners and press the Emmy's Vanilla Bean Cookies to the bottom of the tin to create a clean cookie crust.
6.Fill each muffin mould 3/4 of the way up with the muffin batter
7.Bake for 15-20 minutes or until toothpick comes out clean. Enjoy!
