3 additional Emmy's Vanilla Bean Cookies cookies to fold in | |
1 1/2 cups whole wheat pastry flour | |
3 tsp baking powder | |
1 tbsp pumpkin spice | |
1 tbsp coconut sugar | |
Pinch of sea salt |

1. | Preheat the oven at 350 F |
2. | Mix all of the dry ingredients together and wet ingredients together in separate bowls. |
3. | Set aside Emmy's Vanilla Bean Cookies for muffin crust bottoms |
4. | Incorporate ingredients and mix well |
5. | Line a cupcake tin with liners and press the Emmy's Vanilla Bean Cookies to the bottom of the tin to create a clean cookie crust. |
6. | Fill each muffin mould 3/4 of the way up with the muffin batter |
7. | Bake for 15-20 minutes or until toothpick comes out clean. Enjoy! |
