We took our NEW Brownie Baking Mix and made it into CAKE POPS! Super fudgy, chocolatey and decadent, but still gluten + grain-free! Made with Brownie Baking Mix, and a couple other simple ingredients, these Brownie Cake Pops will be a real crowd pleaser!

What You'll Need

Brownie Cake Pops

1 package Emmy’s Organics Brownie Mix
1/2 cup coconut oil
1 tbsp water
2 eggs
8oz dairy-free cream cheese
Lollipop sticks
Chocolate coating
1 cup dark chocolate chips
1 tbsp coconut oil
Pecans or hazelnuts, finely chopped
Rainbow sprinkles


Prepare the brownie mix according to the package instructions.

Bake in a greased 8x8” pan for 20-23 minutes. Cool (or chill), then crumble into a large bowl.

Add the dairy-free cream cheese, and mix with your hand to a dough consistency. Melt the dark chocolate chips with the coconut oil, cool slightly

Scoop/roll into balls. Arrange on a pan and chill until firm (3-4 hours)

Dip the tip of a lollipop stick into dark chocolate, insert into a brownie ball, and place the other end of the stick into a piece of styrofoam or a cake pop holder. Repeat with each dough ball. Refrigerate until chocolate is set. Dip each ball in remaining chocolate, turning/shaking to remove excess.

Once the chocolate just starts to turn matte, roll in rainbow sprinkles and/or chopped nuts on all sides. Chill until chocolate is set, then serve.
