This recipe is a tasty was to use some of our fave ingredients: our Vanilla Bean Coconut Cookies cashew butter, lemon, and maple syrup.

What You'll Need
- 1 Package Emmy’s Organics Vanilla Bean Cookies
- ½ cup cashew butter
- 3 tbsp lemon juice
- Zest from ½ lemon
- ½ tsp vanilla extract
- Pinch of sea salt
- 2 tbsp maple syrup
- 3 tbsp melted cacao butter or coconut oil
1.Line a cupcake tin with cupcake liners.
2.Divide the Emmy’s cookies amongst the cupcake tin, pressing them into the bottom of each one, creating the base.
3.Melt together all of the filling ingredients, stirring until completely thick and smooth.
4.Divide the filling amongst the bases.
5.Pop in the freezer until hardened. Enjoy!
