These Birthday Cake Cheesecake Bars are made with our Emmy's Organics Birthday Cake Coconut Cookies, cashews, and maple syrup. This recipe is like a party in your mouth ;).

What You'll Need
- 2 bags of Emmy’s Organics Birthday Cake Cookies
- 2C Raw Cashews
- 2 Tbsp Lemon Juice
- 1/4C Melted Coconut Oil
- 1/3C Maple Syrup
- 1/2C Almond Milk
- 1 Tbsp Vanilla Extract
- Pinch of Sea Salt
- 1/3C Vegan Sprinkles
1.Soak your cashews in boiling water for an hour. Drain and add to a food processor with all ingredients except the sprinkles and Emmy’s cookies.
2.Blend until well combined and fold in the sprinkles.
3.Microwave the cookies in a bowl for 30 seconds and then press into an 8x8 pan lined with parchment paper to make the crust.
4.Pour the batter over the crust and freeze for 3 hours before cutting and enjoying!
