What You'll Need
Ingredients
Base:
- 2 packages of Emmy's Organics Vanilla Bean Coconut Cookies
Filling:
- 1 cup Creamy almond butter
- 1 cup chocolate chips
- 1 cup full-fat coconut milk, shaken
- 2 tbsp maple syrup
- Pinch of sea salt
- 1 tsp instant espresso powder
INSTRUCTIONS:
1.Break apart Emmy’s cookies and press into the bottom of a greased springform pan – or lined pan of choice.
2.Prepare the filling by combining all ingredients in a small saucepan over medium heat, whisking until completely smooth and thick. Pour over the base.
3.Place in the freezer until set.
4.Top with drizzled almond butter, cacao nibs, and coco whip!
