What You'll Need
- 3 Emmy's Organics Dark Cacoa Coconut Cookies, crumbled
- 1.5 cups GF flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 Tbsp cacao powder
- 3 Tbsp coconut sugar
- 1/4 cup plant milk
- 3 Tbsp neutral oil
- 1/4 cup date syrup
- 1 tsp flaxseed meal
- 1/3 cup chocolate chips
1.Preheat oven to 350F.
2.Line a baking sheet with parchment paper and set it aside.
3.In a small bowl, combine the milk, oil, syrup, and flaxseed.
4.In another bowl, whisk together the flour, salt, baking soda, cacao, and coconut sugar.
5.Add the wet mixture to the dry, folding in the cookies.
6.Once you have your ball of dough, flatten it out on a cutting board/countertop with a rolling pin and cut out shapes desired.
7.Bake cookies for roughly 6-7 minutes.
8.In the meantime, melt your chocolate chips in the microwave for 2 minutes or on the stovetop and allow the cookies to cool a bit before adding chocolate glaze on top.
