What You'll Need
- 4 Emmy's Organics Dark Cacoa Coconut cookies
- 1.5 cups all purpose flour/GF all purpose flour
- 1/3 cup chocolate chips
- 1/2 cup cacao powder
- 1.5 cups coconut sugar
- 1/4 tsp salt
- 1/2 cup olive oil
- 1 egg or flax egg
- 1/2 cup water
- 1/3 cup peanut butter
1. Preheat oven to 350F.
2.Grease an 8x8 baking pan.
3.In a medium bowl, whisk together the flour, cacao, and salt and set aside.
4.In a small bowl add the sugar and water and heat in the microwave for one minute, so the sugar melts.
5.Add the wet sugar mix to the dry, adding in the oil, egg mix, Emmy's cookies, and chocolate chips.
6.Pour batter into the pan and spread it out evenly, adding the peanut butter on top and swirling around with a knife.
7.Bake for about 30 minutes, allowing it to cool in the fridge for at least 30 minutes before serving.
