If you’ve tried our Birthday Cake Coconut Cookies, you might’ve noticed the tiny crunch and cheerful hues from the sprinkles that are pleasantly dispersed throughout the vanilla-cookie base. In this article we’ll be highlighting the plant-based sources that give the sprinkles that lovely pop of color without the use of anything artificial.
Beets- Used to color the pink sprinkles in our cookies, beets are a common natural coloring agent favored for their potent red pigment. Beets are in the taproot family meaning they grow vertically in the soil, producing a bulbous edible root.

Red Cabbage-Red cabbage is a vegetable that when raw, is a vibrant shade of dark purple. Although it is called “red” cabbage, the vegetable’s pigment actually yields a deep blue color that can be used as a natural food dye, hence the color of the blue sprinkles in our Birthday Cake Coconut Cookies.

Turmeric- Much like ginger, turmeric is a type of plant in the rhizome family. It is praised for its anti-inflammatory properties and is often used as a spice in curry or in this case, to color our yellow sprinkles! The bright yellow color comes from the active ingredient in turmeric called curcumin. It is typically dried and used as a powder but can also be consumed fresh.
Lastly, the color for green sprinkles is made by combining the red cabbage and turmeric pigments! By using colors from various plant and vegetable sources, the sprinkles benefit from the color yet avoid any unwanted vegetable flavor.
