Made with all-natural vegan, and grain-free ingredients, these bites are absolutely delicious. And if you're not convinced enough, they are made with Emmy's Organics Dark Cacao Coconut Cookies!
So what are you waiting for? Grab some coconut milk, cocoa powder, and mint extract and you'll have yourself a simple and yummy treat in no time!

What You'll Need
- ½ cup full fat coconut milk
- ¾ cup raw cacao powder
- ¼ cup melted coconut oil
- ¼ cup cacao butter (or more coconut oil)
- 1 tsp mint extract
- ½ tsp vanilla extract
- Pinch of sea salt
- ½ cup maple syrup
- 1 tsp espresso powder
1. Crumble the Emmy’s Organics Dark Cacao Cookies in a large bowl. Line a cupcake tin with liners and divide the crumbled cookies amongst the tins, pressing the mixture to the bottom of each one to build the crust.
2.For the filling, combine everything in a high powered blender until completely smooth. Taste and adjust as wanted.
3.Divide the filling amongst the tin. Place in the freezer until set!
4.Optional, add a garnish of mint leaves and cacao powder sprinkle, coco whip, or chocolate drizzle!
