What You'll Need
- 5 pears, chopped
- 1/4 cup coconut sugar
- 1 Tbsp apple cider vinegar or lemon juice
- 1 tsp coconut oil
- 1/4 cup water
Crumble top:
- 4 Emmy's Organics Vanilla Bean Grab-n-Go Coconut Cookies
- 1/3 cup gluten-free oats
- 1/4 cup almond flour
- 1/4 cup coconut sugar
- 1/4 tsp salt
- 1/4 cup chopped almonds
- 1 Tbsp coconut oil, melted
INSTRUCTIONS:
Preheat oven to 350F. In a large saucepan, add in the filling ingredients and bring to a simmer; allow to cook for about 5 minutes, until pears have become slightly tender. Take off heat and add to an 8x8 baking dish. In a bowl, mix together all of the crumble ingredients except for the coconut oil - add in the oil and mix with your hands so that it is evenly distributed, then just crumble the mixture all over the filling and bake for 30 minutes, until golden brown and cooked.
